This is the very basic beginning of a recipe page. I'll make it more fancy-schmancy once I've gotten around to adding more recipes (it seems like too much work for the few recipes I'm posting right now!).

Mississippi Mud Pie

  • 1/3 cup cocoa (knappt 1 dl kakao)
  • 1½ cups flour (3½ dl vetemjöl)
  • 2 cups sugar (knappt 5 dl socker)
  • ½ pound butter (250 grams smör)
  • 4 eggs (4 ägg)
Mix the above ingredients, adding the eggs one at a time. Grease a 9x13 cake pan (about 20x30 centimeters, or whatever the measurements are for a "standard" rectangular cake pan), and spread the batter evenly in it. Bake at 350°F (175°C) for about 45 minutes, until cake is done all the way through. Spread one 7-ounce jar marshmallow creme ("Marshmallow Fluff" -- you can find it on the American shelf at many grocery stores in Sweden) over the hot cake.

  • 1/4 pound butter (125g smör)
  • 1/3 cup cocoa (knappt 1 dl kakao)
  • 3-4 Tbsp. evaporated milk (3-4 msk matlagningsgrädde)
  • 1 box powdered sugar (1 kartong florsocker)
  • 1 tsp. vanilla extract (1-2 tsk vaniljsocker)

Heat the above ingredients in a small saucepan over low heat and stir until smooth. Pour the mixture over the cake and let cool.

Kolakakor (Sugar-cookie-type cookies, only better!)

  • 100g rumsvarmt smör eller margarin (½ cup butter or margarine, softened)
  • 1 dl socker (a bit less than ½ cup sugar)
  • 1 msk vaniljsocker (1 Tbsp. vanilla extract)
  • 1 msk ljus sirap (1 Tbsp. light corn syrup)
  • 2½ dl vetemjöl (1 cup flour)
  • 1 tsk bakpulver (1 tsp. baking powder)
Heat the oven to 350°F (175°C). Cream together the butter and the sugar, then add the remaining ingredients (mix the baking powder together with the flour before adding). Work it quickly into a dough.

Roll the dough by hand into three "ropes" that are as long as a cookie sheet. Put them on a cookie sheet and flatten them a little.

Bake them in the middle of the oven for 10-12 minutes. Cut the lengths at an angle into cookie-sized pieces (I use a pizza cutter) while still hot. Cool completely and store in an airtight container.

Banana Bread

  • 1/3 cup (75g) butter or margarine
  • 1 cup (~2½ dl) sugar
  • 2 eggs
  • 1/3 (~3/4 dl) cup water
  • 3-4 overripe bananas, mashed
  • 1 2/3 cup (4 dl) flour
  • 1 tsp. ( 1 tsk) baking soda
  • ½ tsp. (½ tsk) salt
  • 1/4 tsp. (1/4 tsk) baking powder
Heat the oven to 350°F (175°C). Grease the bottom only of a loaf pan. Cream together the butter and the sugar. Beat in eggs. Add the water and bananas and mix well with handmixer on medium speed. Add remaining ingredients and stir together just until moistened. Pour into loaf pan and bake in middle of oven for 55-65 minutes, until a knife inserted in center of loaf comes out clean. Let cool in pan for ten minutes, then invert pan to remove loaf. Let cool.

Norwegian Waffles

  • 4 eggs
  • 2 Tbsp. (2 msk) sugar
  • 2 dl creme fraiche (3/4 cup sour cream)
  • 3½ dl (1½ cup) flour
  • ½ tsp. (½ tsk) baking soda
Beat together eggs and sugar. Add creme fraiche and stir well. Stir in flour and baking soda. Cook batter in a waffle iron. Makes about seven waffles.
